Sunday Night Dinner (well ok, it was Monday night but it’s all the same) - Chicken Parm Parm
Trust me this tasted much better then the picture. Since it was up to me to make dinner, and we still had some of J’s great sauce in the freezer, why not this idiot proof dinner. Well was well until realized I did not have oven high enough to brown the fresh mozzarella, so that’s why the cheese kept its whiteness.
Baked chicken parm with sautéed kale and sautéed zucchini
Wine: 2010 Elk Cove Pinot Noir - ran out of weeknight Italian, tomato friendly reds, so popped open this young pinot from my last wine club shippment, tear (because of my job change, I have no where to get the shipments delivered since they require an adult signiture). At first smell and taste, the florals and cherries exploded out of the glass, this was so expressive but not so complex. But once I introduced food, a spice on the finish started appearing; as it was open longer the spice was more pronounced. A great entry pinot vintage from Elk Cove.
